Drinks whizz Leo Robitschek has brought over some of his favourite cocktails from New York to the Giannini Bar, and introduced a few distinctly Californian additions such as the Dr Feelgood (mezcal, fino sherry and avocado). Chef Daniel Humm and restaurateur Will Guidara (of award-winning Eleven Madison Park) are in charge at Mezzanine, where Humm's famous roast chicken for two, oozing black-truffle and brioche stuffing, is a warming crowd-pleaser. All the bedrooms are big and cheery with entrance halls, marble tables and elegant sofas covered in thick floral fabrics. The marble bathrooms are gilt trimmed, and cupboards are lined with custom-print wallpaper, as is the box containing Italian Leone sweets by the bed. Here nothing has been left to chance.

Booking one of the 32 tents here, cocooned in Tulum's beachfront jungle, means committing to a full-on experience. Guests are welcomed with an invitation to take pinches of ground copal-tree resin, prized by the Mayans for its spiritual properties, and sprinkle it on embers while mindfully releasing any worries from the outside world. Free-to-join activities include morning ashtanga and kundalini yoga, quetzal senso meditation and group honey massages on the beach. Kfir Levy started Habitas with his partner Eduardo Castillo as a pop-up event to foster personal development through music, communal dinners and active participation. This is their first permanent property – others will follow in Namibia and Malibu – although the three-storey Clubhouse, fronted by a sheltered beach and pool, is the only fixed structure in the complex, comprising beach-level, Latin-America-meets-the-Med restaurant Moro, a yoga mezzanine and rooftop events space. Chef Federico Cappi uses local ingredients in dishes such as wood-fired octopus with purple-sweet-potato purée and cheesecake made with goat's curd and served with guavas and pistachios. The tents themselves have hardwood floors and outdoor rain showers and are sparsely, albeit thoughtfully, furnished with vintage dressers and mismatched rugs. The sliding glass doors on the semi-enclosed terraces open wide to the Caribbean sea crashing over a slate-grey escarpment of rocks.

At first sight, the thatched roofs of Bisate Lodge look like the shaggy nests of a colony of creative weaver birds suspended in the cloud forests. Clearly this is a place at ease in its African skin, and it has settled naturally into its location. South African architect Nick Plewman has drawn inspiration from the traditions of Rwandan royal palaces with their fluid, curvaceous lines, ribbed walls and use of materials such as wood, volcanic rock, bamboo and rattan. The family who have been building the palaces in Nyanza for generations advised on the construction details. Interior designer Caline Williams-Wynn, from the Cape Town studio Artichoke, has channelled relevant themes with Rwandan textiles, cowhide rugs and furnishings decorated with imigongo, a local adobe art form of swirling geometric patterns. With their high ceilings, the villas – there are only six – feel as vast as churches. Stone fireplaces form the centrepiece of elegant seating areas, and fur throws cover the divans. The one non-traditional element here are the floor-to-ceiling windows opening onto long balconies with views across agricultural fields to Bisoke, Karisimbi and Mikeno, the three magnificent volcanoes of the famously mist-covered Virunga mountains.
FLASH POINT As Rwanda steps into the limelight as Africa's hottest destination, Bisate is already being talked about as its most exclusive lodge. It is also just a short drive to park headquarters, from which treks set out to visit the mountain gorillas.

You might have thought Nick Jones would be all out of moves by now. Но нет. This latest addition to the all-conquering members'-club-plus-hotel franchise is full of surprises. The biggest is simply that it works as well as it does, considering its non-central location (not obviously sexy or characterful) and the space it occupies in what used to be BBC Television Centre (one of those monolithic concrete affairs that students of architecture get excited about but the rest of us tend to block out as the visual equivalent of a car alarm going off in the middle of the night). Yet work it does. The overall square-footage is huge (86, 000), even if the 45 rooms are not (and, seriously, they're not). The look is difficult to characterise. There are lots of test- card patterns, dressing-room-style mirrors and other retro TV-inspired touches. The lifts resemble the Tardises in Doctor Who. There's a suite of specially commissioned artworks dedicated to Tony Hart. The whole place has a tremendous sense of warmth and humour and playfulness – one that somehow spills outside and brings a good-natured glow to a part of West London not conspicuously blessed with such qualities. There goes the neighbourhood! And thank goodness for that.

SÃO TOMÉ AND PRINCIPE
It is something of a miracle that São Tomé and Principe have remained under the radar for quite so long. These two equatorial islands, former Portuguese colonies and one of the world's smallest nations, lie 210km off the west coast of Africa. Part of the reason they have been overlooked is that, other than Bom Bom Island, they have lacked the kind of properties to attract all but the intrepid traveller. The arrival of beautiful Sundy Praia on a secluded bay on Principe, the smaller and even quieter of the two islands, has changed all that. The creation of French architect Didier Lefort, this handsome lodge consists of 15 tented villas, though you would be forgiven for not clocking the tented part. These are seriously smart bedrooms: big, beautifully designed and elegantly furnished. A vast stone bath stands in a windowed alcove; huge beds offer views of the sea and the beach through floor-to-ceiling windows; there are private pools on the wide wooden decks. Soaps, creams, spa oils, even snacks in the mini-bar, have all been made using organic and sustainable local ingredients. The South African landscape designer Greg Straw has carefully cocooned everything using indigenous plants. A path through dense foliage leads to a bridge over a jungle-framed stream and beyond to the restaurant, the hotel's moment of architectural theatre. Soaring bamboo ribs echo the massive trees of the surrounding forests, supporting a space of cathedral proportions.
FLASH POINT For lovers of Africa, and obscure colonial outposts with unvarnished charm in particular, this has been one of the most anticipated openings of the year.

CHICAGO, USA
The first Viceroy in the Midwest opened last year in Chicago's Gold Coast, a tree-lined neighbourhood with streets of brownstone houses. The hotel is a delight of visual surprises. The squat, lower portion of the Twenties building, with its brick and terracotta façade, was carefully preserved from its earlier incarnation as the Cedar Hotel; above it, connecting past to present, is an 18-storey glass tower peering out over Lake Michigan and the city skyline. In the lobby, known as The Library, guests are greeted by an enormous blue poetry wall filled with quotations from Marcel Proust. And in the bedrooms gold wallpaper doubles as artwork and rich, velvety curtains offset mid-century-modern furniture. But perhaps the biggest and best surprise lies within the two restaurants: the opulent all-day Somerset and Art-Deco-inspired rooftop Devereaux. Both showcase sensational seasonal dishes from hot chef Lee Wolen, who has a knack for making diners rave about something as seemingly simple as whole-roasted chicken, and as eyebrow raising (and entirely delicious) as smoked-beet tartare. Elsewhere in this sleek new arrival there are yoga and meditation classes, a rooftop pool for the warmer months, and even a Tesla car for nearby drop-offs.
FLASH POINT Chicago is known for its colourful neighbourhoods but most of its hotels are downtown. Not Viceroy. This makes an ideal launch pad to explore all things local.

CHAMONIX, FRANCE
This is an exceptionally cosy retreat high above Chamonix at the base of France's largest glacier, the Mer de Glace. Originally the Grand Hotel du Montenvers, the reassuringly solid granite building dates from 1880 and was recently renovated by the Sibuet family, the stylish clan behind Fermes de Marie in Megève. The hotel is only accessible by funicular, foot or skis, via the legendary Vallée Blanche off-piste route. Much of the original structure and its rugged mountaineering vibe remains: Aperols are mixed at the fabulous Twenties bar; climbing boots are kicked off in front of roaring fires; chandeliers are fashioned out of climbing rope and miners' lights. The 20 bedrooms, each named after explorers who have stayed here over the decades, range from a 10-person dorm to wonderfully romantic suites. All have eye-popping views of the surrounding peaks and glacier, traditional timber-clad walls, edelweiss-print woollen curtains and slate-lined bathrooms stocked with products from Sibuet's lovely Pure Altitude brand. Summer glacier walks and winter ski days are rewarded with three courses of hearty Savoyard food (boozy cheese and girolles on toast, creamy tartiflette and blackberry tart) served on enamel tableware and washed down with local wines.
FLASH POINT Have lunch at the Refuge's sister restaurant, Le Panoramique, a bistro-style affair three minutes' walk away known for its traditional casseroles (go for grandmother's chicken for the ultimate in comfort food).

There are plenty of tiny things at the city's most enchanting new hotel that lend it charm and character: the hand-crafted wood panelling in the lift; classic brass knobs on the radiators; cocktails in glasses shaped like tulips rather than the dull old coupe; Bakelite light switches that give a satisfying clunk. And when it comes to the big picture, owner Alexander Kølpin has taken all he learned from his family's hotels in the countryside, plus years spent travelling as one of Denmark's leading ballet dancers, and created a property that truly raises the bar. Style-wise, the Sanders combines Danish mid-century modern and colonial British (wickerwork here and there, palms in pots), while the Sanders Kitchen, with its seasonal menu, white-tiled walls and white marble tables, has the feel of a French bistro – three looks that are all about relaxed cosiness and feeling at ease. TATA, the clubby bar with heavy drapes and flattering low lighting, is popular with Copenhageners, but not to the extent that it's become a scene. Outside, on a quiet street that's just a short walk from ever-lively Nyhavn, there are bicycles to borrow for exploration. Should you casually mention plans for the next day, it is probable you will come down to breakfast to find the concierge has printed off a map, laminated in case it rains.
FLASH POINT The newly opened fifth-floor conservatory is a lovely evening retreat with views out over the city, as well as a bright and cheery place for breakfast.

BYRON BAY, AUSTRALIA
When the breeze is rustling through the bangalow palms and the plovers are nesting contentedly on the lawn, this place so convincingly channels a seaside vibe that it's easy to forget the beach is 20 minutes' walk away. What the cleverly converted motel lacks in waterfront access, however, it makes up for in serious style. Owners Taliah and Sein Lowry have opted for a sleek palette of whites, blacks and neutrals, adding texture with woven lampshades, linen curtains and piles of plump cushions. There are 14 suites, some with small kitchens, but for couples the pick of the lot is The Barn with its reclaimed beams and skylit shower. For those travelling in a posse, the five-bedroom Cottage, set in a tropical garden, is just the thing. The Bower has a small pool in the works (due to be completed in September) but no restaurant, although with Byron's foodie hangouts down the road it isn't a big deal, and the hotel does a range of hampers stuffed with goodies such as pumpkin and goat's cheese frittatas and roast-tomato salads. Close proximity to town – and free bicycles – means it's easy to get by without a car, but it might be worth investing in a set of wheels to properly explore the surrounding area.
FLASH POINT The service is friendly and super-attentive, whether asking for a beach towel on a sunny day or a board game if the rain sweeps in.

HONG KONG, CHINA
This is the new hotel everyone in Hong Kong is talking about. It's in a great location, slightly above the Central Business District with views down past the mass of banks and mercantile headquarters to the harbour, but what really sets it apart is the compelling design by Foster + Partners. The original building – a relatively diminutive 26-storey office block – opened in 1969, when its distinctive eco-friendly windows, sharply angled to frustrate the tropical sun, were regarded as radical. Today, those same portals provide the 336 rooms and suites with sensational panoramas but, with its expanse of white marble in the lobby and Andre Fu interiors in the signature restaurant, there is little evidence that this was once a hive stuffed with government bureaucrats. The inner-city setting ensures there is a real buzz about the place, with a steady stream of Hong Kong residents and visiting hot shots swinging by to check it out. As a result, the ground-floor Murray Lane bar fills up shortly after sunset (a thirst-quenching lemongrass gin-and-tonic heads the menu), and well-shod diners are finding their way to the latest outpost of Michelin-starred Guo Fu Lu restaurant for its top-notch Cantonese food, including crispy roast goose and delicious king prawns with walnuts.
FLASH POINT Make the most of the neighbourhood over weekends when the office bees head home: Hong Kong Park (eight hectares) and the Edward Youde Aviary lie just to the east, and the Gothic Revival St John's Cathedral just to the west.

Jacques Garcia, the French architect and designer behind L'Hôtel Costes in Paris, Marrakech's La Mamounia and the USA's NoMad hotels, knows how to create an atmosphere. His designs are notoriously theatrical. Garcia's inspiration at this grand former Baptist church HQ in Holborn was, he says, Oscar Wilde, who lived and wrote some of his most famous works in London, and whose quote from A Woman of No Importance – 'Every saint has a past, and every sinner has a future' – is the hotel's mantra. Original religious features and Garcia's opulent vision are overlaid throughout the Grade II- listed building. In bedrooms (there are 39, all different), Royal Doulton terracotta panels depicting biblical scenes sit alongside intricate silk screens stitched with golden butterflies and turquoise peacock feathers. Downstairs, the original 1902 octagonal chapel is now the swinging Baptist Bar and Grill, dishing up reimagined British fare (coronation crab salad; Herdwick lamb saddle with miso braised shoulder) beneath its huge dome. And throughout, the attention to detail is staggering: hand-stencilled walls that took French artists weeks to complete; silver tankards for serving beer that will be engraved with initials for regular guests; a staff wardrobe in custom-made silk, jacquard and cashmere, and 457 Lalique glass hummingbirds, parakeets and cuckoos perching on lights and chandeliers.

The only hotel in the northern Shaviyani Atoll, a comet of starry-white sands with barely another island in sight, Sirru Fen Fushi has the kind of horizon views that could convince even the most scientific mind that the world is flat. What goes on below the ocean's surface is equally pristine, with troops of neon-blue trumpet fish and kaleidoscope reefs barely affected by bleaching. And now it has the Maldives' first underwater sculpture park, created by British artist Jason deCaires Taylor with dozens of life-size human figures and elemental shapes moulded from pH-neutral concrete and sown with coral polyps. Over time, it will form an artificial reef as well as an inspiring, ever-changing artwork. Is a snorkel around a subaquatic gallery reason enough to visit? Yes – it's spectacular. But other temptations include enormous villas with cool, glamorous interiors of creamy marble, crochet rugs, rope chandeliers and plenty of amber-coloured hardwoods. Some are slung on the beach, others over the water, with five safari-style tented villas hidden in the island's jungly heart. There are bicycles to zip between morning yoga, art and photography classes and Thai, Balinese and Indian massages at the Willow Stream spa. Dining, too, is tip-top, with plenty of local flavours on the menu: egg hoppers and mango juice for breakfast; grilled lobster and cold baby coconuts for lunch; reef fish paired with sake for supper. In the Sirru Fen universe, beach break and culture cohabit perfectly.

Work began on the new Aman 2, 000 years ago, in what is now Jiangxi Province, 700km west of the hotel's present location on the outskirts of Shanghai. Intrigued? The story of Amanyangyun could hardly be more extraordinary. In 2002, Ma Dadong, a self-made billionaire, took a break from business in Shanghai to visit his parents. When he went back to work he took with him some curious souvenirs of his trip – 50 disassembled houses from the Ming and Qing Dynasties and 10, 000 camphor trees, the oldest of which were dated back two millennia, ancient earth still clinging to their roots. All were slated for destruction to make way for a dam. The houses were reassembled and transformed into 13 antique villas, 24 courtyard suites and a ravishing cultural pavilion known as Nan Shufang. Welcome to Amanyangyun. The old buildings have been cleverly complemented, extended or, in some instances, encased by new ones, discreet, restrained and hard-edged, the work of Australian architect Kerry Hill. Nevertheless, there are certain elements of pure theatre: the carpet of mood-enhancing mist that, at the press of a button, rolls across your villa's ornamental garden, for example. Yet it is the old buildings and trees that provide the real drama here, and impart a unique sense of spirituality and grandeur.
FLASH POINT Nan Shufang was originally a school and, in a way, still is. Here, guests can enjoy the pastimes of the Chinese literati: calligraphy, painting, music, incense appreciation and gongfu cha or 'labour-intensive tea-making'.

The Hoxton is on a roll. Since the original Shoreditch hotel was bought by Ennismore in 2012, new outposts have opened in Holborn, Amsterdam and Paris, and there are more to come in Williamsburg, San Francisco, Chicago, LA, Shepherd's Bush and Southwark by 2020. This latest Hoxton is in Sentier, the rapidly gentrifying former garment district in the central deuxième, and introduces itself with a double-height lobby bar and an 18th-century spiral staircase. You won't find any straight-backed suits here; guests pad about in hi-tech running gear and bag velvet sofas for a coffee. All the public spaces are beautifully designed, with banquette seating, globe lights and mid-century armchairs in the brasserie, and floral wallpaper and tasselled lamps in Jacques' cocktail bar (a lovely nook hidden up another spiral staircase). And if this is all beginning to sound a bit familiar or over-branded, worry not. The Anglo-global core is wrapped in very elegant French clothing – an 18th-century hôtel particulier with a rococo facade and two inner courtyards – and the rooms, by Monaco-based design studio Humbert & Poyet, feel special whatever their size, with chevron parquet floors, woven metal partitions and Lampe Gras lighting. The English have landed.
FLASH POINT The energy of the young, international staff is utterly infectious, not least because they all seem to be having as much fun as the guests.

GISAKURA, RWANDA
For a pervading sense of tranquillity, you can hardly go wrong with a tea plantation. Nyungwe House is One&Only's first nature lodge (the group is best known for its beach hotels), and it could hardly have picked a more amazing location in south-west Rwanda. The property is surrounded by the velvety, languorous lines of the mature plantation of Gisakura, shot through with as many shades of green as Ireland. In the morning, over breakfast, it's possible to watch the pickers moving slowly through the waist-high plants with traditional baskets on their backs, harvesting the daily crop of fresh new leaves. The vast central sitting room, bar and dining areas have a stylish, contemporary feel, with theatrical touches, numerous firesides and floor-to-ceiling windows for those sweeping views. But there is another element here, beyond the sensuous lines of cultivated tea: the surrounding rainforests of Nyungwe, home to 13 primate species and a startling array of strange and wonderful tropical birds. All the villas overlook this vine-strangled world, with uninterrupted views from the beds, the baths, and the private infinity pools (the hotel is about to be refurbished, to re-open at the end of the year). The absolute highlight of anyone's stay is to go tracking chimpanzees in the forest, in the full knowledge that the most lavish afternoon tea this side of Darjeeling, served by an open fire, is waiting back at the lodge.

There had been Oberoi hotels before, of course – the company launched in 1934 – but this was the first built from scratch to founder Mohan Singh Oberoi's specifications. When it opened in 1965 it was very groovy, a cool place to hang loose if you had the bread to pay for it. And after The Beatles stayed in July 1966, its celebrity status catapulted and thousands of actors and politicians followed. But times and expectations change, and by the time it hit 50, most agreed the flagship needed some love and attention. Towards the end of 2016, the hotel closed for refurbishment and once again it has emerged as the five-star outfit to beat in New Delhi. Its location – backing onto the historic Delhi Golf Club and with views of Humayun's Tomb from its upper floors – has always been spot-on, but now it delivers on all fronts, with bigger rooms, all with enlarged picture windows flooding the sleek teak-and-white-marble interiors (by NYC-based designer Adam Tihany) with the celestial light of India. The much-loved Threesixty° restaurant is back, serving an astonishing array of global dishes – sashimi, grilled Japanese quail, Malabar fish curry – along with a new signature modern Indian from Alfred Prasad and, on the top floor, a Chinese restaurant, under the direction of chef Andrew Wong, with a sassy rooftop cocktail bar next door. All this, and staff blessed with almost spooky powers of intuition.
FLASH POINT The newly reincarnated patisserie and deli is nothing short of perfection, with cheeses and chocolates, and fresh cake and breads produced hourly.

RUAHA NATIONAL PARK, TANZANIA
The otherworldly, hallucinatory landscape of Tanzania's massive Ruaha National Park, with its massive, bulbous baobab trees and spiked palms, plus an absurdly rich biodiversity (lions, leopards, elephants and more than 550 species of birds) and lack of safari vehicles, combine to make visitors feel as though they have travelled back in time. Until recently, the basic camps and lodges reinforced that retro feeling, and not always in a good way. Understanding the potential of this under-appreciated reserve, and showing great faith in its future, the Anglo-Dutch Asilia group has built this extraordinary new lodge, the likes of which this part of Africa has never seen. Balanced atop an outcrop of granite boulders, it was constructed almost entirely of sustainable, locally sourced wood, ensuring its audacious profile blends in with its surroundings. The eight breezy bedrooms have large, timber louvred windows and wraparound decks for open views across the magnificent Ruaha landscape. There's an infinity pool up at the top of the camp to cool off after a morning game drive, as well as a small spa, and a rather well-stocked bar and library. And ultimately this is a place to relax, put the game-spotting check-list to one side and soak up the sights and smells of untrammelled Africa, especially if you book the three-bedroom private house with its own guide and vehicle for complete flexibility.
FLASH POINT Get out of the vehicle and embark on a walking safari on one of the days you're in the park – stroll through a forest of baobabs while elephants bathe in the distance.

'Rio is a beauty, ' quipped Marlene Dietrich, who was always rather good with her quips, 'but São Paulo, ah, São Paulo is
a city.' It's hard to believe that this urban jungle was ever an actual jungle. Or rather, Atlantic Rainforest. But so it was, a coastal corridor of teeming biodiversity, covering 330 million acres. Since colonisation, humankind has reduced that area by 85 per cent. In São Paulo itself, a mere 30 acres of Atlantic Rainforest remain. At their edge is Palácio Tangará, an imposing white edifice of uncertain architectural provenance but great charm, which would not look out of place in the Swiss Alps. Inside, the closer you look, the more you find to admire. Even the smallest rooms are delightful, swathed in muted, faintly patriotic greens and yellows; the largest are magnificent. The windowless Burle Bar makes for a striking contrast with the light-flooded Jean-Georges Vongerichten restaurant next door (filet mignon with râgout of wild mushrooms – meu Deus). But it's the little things that give the hotel its Brazilian heart and soul, many of them courtesy of Patricia Anastassiadis, a Paulistana architect. Just off the lobby, for instance, there's a screen made of the stretched skins of tilapia, an Amazon River native, alongside a coffee table assembled like a jigsaw of inlaid bullhorn, in recognition of Brazil's ranch culture.
FLASH POINT Palácio Tangará is brimming with local art and design; the tasting table in the wine cellar, which Pedro Petry contrived from the roots of a pequia tree, is not only beautiful but also, with the history of the Atlantic Rainforest in mind, moving.

YALA PARK, SRI LANKA
Leopards live in the Yala National Park – alongside elephants, crocodiles and mongooses – in an arid terrain of saltpans, brackish lagoons, thorn scrub and huge balancing rocks. Adjacent is this marvellous hotel, Sri Lanka's new adventure playground. Set aside any preconceptions of camping, or even glamping. The tents are, in fact, luxury pods built in teak, their silk linings laced as tightly as Scarlett O'Hara's corset and furnished with copper baths and campaign furniture. None are far from the vaulting restaurant and bar, through which a seawater pool runs like a Venetian canal, where chef Nisanka Alawatta produces exquisite seafood platters and local curries. Visitors come to this far-flung south-east coast in the hope of spotting a leopard. No promises are made, but a dawn departure in the company of the hotel's chief guide, Chandika Jayaratne, is certainly a step in the right direction. In the dry season of September and October, when the park is closed, the lodge organises bird-watching trips to the nearby Bundala wetlands, and trips to the historic Buddhist stupa at Kirinda and the ancient rock temple at Sithulpawwa. But it can be just as edifying to hole up in your blissfully cool room and watch as an elephant idly quenches his thirst by draining the pond outside.
FLASH POINT This is reassuringly safe camping with just a frisson of unpredictability. Elephants, leopards, wild boar and other denizens of Yala can and do enter the lodge grounds at any time.

The latest opening from the Italian jewellery brand is built on
a seahorse-shaped reclaimed island with views east to the high-rise melee of downtown Dubai and west over the Arabian Gulf. Architects Antonio Citterio and Patricia Viel have done well to mix slick Italian design with local details. For example, the exterior walls of Arabescato marble are softened by dappled light thrown by the pierced steel sunscreens that shade every window; the Roman-style swimming pool is finished with jewel-like gold tiles, and the spa features a handsome hammam. Bedrooms are done out in a crisp palette of greys and furnished with Italian design classics from Flos, Maxalto and B&B Italia; the walls are hung with stylish archive jewellery gouaches while Beni Ouarain rugs from the Atlas Mountains add cosiness underfoot. And the menus in all three restaurants are lessons in Italian classics – the fresh pasta with octopus and potato at Il Ristorante is particularly memorable (everything here is cooked with olive oil harvested and pressed in partnership with the Bulgari family). At the end of each day, a party crowd gathers at the yacht club, a short stroll around from the marina on a promontory jutting out into the bay, where a gentle breeze endeavours to keep things cool even in the height of summer. This is a stylish berth for an at-a-distance appreciation of the city.
FLASH POINT Cocktails are served at the tented day beds around the swimming pool until the last guest leaves. A chauffeured golf buggy back to your room is optional but advisable.

In the Renaissance, cabinets of curiosity were assembled to contain all sorts of wonderment: toads in bell jars; skeletons playing the violin; the inevitable 'mermaid'. The Mandrake, carved from a former TV headquarters on an everyday street in Fitzrovia, has a similar role, conjured as a personal project by Beirut-born whizz kid Rami Fustok and his designer sister, Tala. A fabulous mythological creature, part peacock, gazelle and kangaroo, poses in shimmering mid-leap above the turquoise cocktail bar, surrounded by African masks and strange, bony sculptures. There are trippy artworks all about, from surreal erotica to a huge, Westeros-style chandelier lit by 30 candles; the open courtyard is shaded by two towering palm trees shipped from New Zealand. Toto, we're not in London anymore. Rooms are set around an atrium brushed by cascading jasmine; some are pocket-sized overnighters; while suites are as expansive and nuanced as a Seventies issue of Domus, with black and white marble and Bedouin-style beds. The owner has even collected a restaurant, Serge, from Hong Kong, run by two Parisians with a glint in their eye and Moroccan-spiced cauliflower and Basque hake on the menu. Despite the keen attention to millennial tropes such as inking and street art, this is a hotel that steps a little outside the urban jam, with nooks of calm to squirrel away in (try to find the greenhouse lounge). Pure escapism.

Ninety miles north of New York City, deep in the Hudson Valley, lies this stone manor house and 45-acre estate dating from 1765, now brought dynamically back to life by hotelier Anthony Champalimaud. Take the train from Grand Central and the excitement builds palpably as passengers thin out on the approach to Wassaic, the station for Troutbeck, at the end of the line. Originally the home of the Benton family, and later the literary critic and civil-rights activist Joel Spingarn, the house has always played host to writers, politicians and social reformers, with Emerson, Hemingway and Sinclair Lewis among them. Champalimaud is only Troutbeck's fourth owner, and his mother, the celebrated designer Alexandra, is responsible for the soft, sympathetic interiors. It looks and feels like a well-run private home, elegantly styled but never showy, with wood-burning fireplaces and a pantry stuffed with help-yourself treats. In the informal, light-filled dining room, where a leek and cherrystone clam carpaccio might precede loin of lamb and ramp pureé, nearly everything is locally sourced. There are good books everywhere, including ones by Balzac, Langston-Hughes, Mary Higgins Clark and a well-thumbed tome called Toledo & Its Beauty. Which tells you everything you need to know. Because Troutbeck isn't especially sophisticated or glossy or superior, just the real deal. And that, frankly, is what makes it so wonderful.
FLASH POINT Swim in the outdoor pool, fly-fish the Webatuck Creek (which runs through the estate), ski 35 minutes away at Catamount in winter or catch an art exhibition at the local Wassaic Project.

The Santiago de Chile-based Awasi group doesn't rush things. This, its third venture, was 10 years in the making. Соревнование? To deliver a low-impact, personalised experience (as at its Atacama and Patagonia properties) as close as possible to the high-footfall Iguazú Falls. The result, opened in February, is a small lodge on a bluff over the Iguazú River. Surrounded by Atlantic rainforest, with blue morpho butterflies and capuchin monkeys the only neighbours, it has just 14 bright, airy villas built from sustainable hardwoods; all are pristine, pared-back counterpoints to Mother Nature's clutter, with whitewashed walls, vast white beds, plain textiles and expansive wooden terraces with plunge pools. Expert guides take guests kayaking on the Yacu-i stream and birding in off-radar forests; easy hikes are planned over mocktails laced with yerba maté, the local tea-like brew. The highpoint is, of course, the cascading cataracts themselves, viewed with a private guide at canny times of the day. Back at the lodge, Venezuelan chef Aarón Castillo Telleria balances the requisite Angus steaks with flavoursome chilled soups, delicately flavoured pacu and surubí fish, and locally grown manioc and plantain. Wines range from robust new Malbecs to floral Torrontés and small-volume blends. Head barman Juan specialises in old-school Argentine apéritifs and digestifs, such as the vermouth-like Hesperidina and more of that yerba maté, this time infused in gin.
FLASH POINT Iguazú has always been world-class spectacular; now it has a hotel to match.

Justin Salisbury was just 20 when he opened his first hotel (with then girlfriend, now wife Charlotte), giving his mother's seafront guesthouse in Brighton an inspired on-the-cheap overhaul by posting an ad on Gumtree for artists to decorate the rooms in return for board. It became the first Artist Residence: bold, bohemian and packed with personality. Ten years on and there are now four, adding a restored Georgian pile in Penzance, a funky townhouse in London's Pimlico and this, the latest, in rural Oxfordshire. The former Mason Arms pub has a story as well: its cigar-loving previous owner Gerry Stonhill flouted the smoking ban, paying the fine in coppers, and reportedly refused to let in children, dogs or vegetarians. Justin and Charlie do quirky too, but in a much more covetable way: House of Hackney wallpaper in the dining room, pink mohair banquettes in the bar and a globetrotting combination of furniture and fabrics in bedrooms. When it opened there were five of these tucked in the eaves above the pub, but three more have since been added in the stables and barn, as well as a shepherd's hut overlooking the herb garden. The spa and café are still to come, after the Salisburys complete their biggest project yet, in Bristol. The artist connection is still very much in evidence, with conversation- starting modern art popping up all over the low-slung beamed spaces: Lucy Sparrow's cornershop supplies made of felt beside the bar; an Andy Doig neon overlooking the cocktail bar asking teasingly 'What did I do last night?'

Garrisoned in a flower-filled valley, with a waterfall-fed river percolating through, this is an Indochine dream scene. More romantic hill station than hotel, the Rosewood's 22 suites, villas and stilted tents fan up the hillside and along the river, reached by red-brick paths speckled with rainbow blossoms and butterflies. Each of the lodgings is individual, styled around the 19th-century explorers, botanists, traders and cartographers who visited the region; some cool white with caramel-coloured wall maps and cartoonish faux tiger-skin rugs; others parakeet-green with chinoiserie panels and archive illustrations of beautiful insects; all have patterned floor tiles, teak shutters, vintage bathtubs and soft linens. Upriver there's a spa, with three tented rooms and thoughtful treatments harnessing the healing powers of local plants and herbs. Downstream is The Great House, a whitewashed mansion where, in summer, dinner is served on the terrace overlooking the pool and, in the cooler months, by crackling log fires. The menu is exciting, featuring Royal Laotian dishes, most of which were banned under the Communist government but rescued from extinction by chef Sébastian Rubis, who traversed mountains and remote villages in search of old recipe books and oral accounts. Dishes you won't find anywhere else include braised buffalo with aubergine and bitter leaves, and pork curry tinted candy-floss pink with sour fish eggs. Afterwards, the rushing river provides the sweetest of Laotian lullabies.

The NoMad neighbourhood is home to an increasing number of hotels and restaurants (Daniel Humm's Eleven Madison Park is a 10-minute walk away), but Made has five food and drink spots of its own, including Ferris, a
subterranean dining room with warm oak panelling and talented young chef Greg Proechel, whose seasonal dishes include grilled lobster tail, and hake with a clam broth. Cocktails, such as the Gold & Delicious (apple brandy, Japanese whisky, almond and Castilian bitters), have been created by husband-and-wife bartending power couple, Natasha David and Jeremy Oertel, and more of their concoctions can be sampled at Good Behavior, the tiki-inspired rooftop joint where Zambian ironwood tables roam a jungle of tropical foliage. Paper, the lobby coffee shop, serves excellent Brooklyn-based Devoción roasts alongside speciality drinks such as matcha lemonade, in chic ceramic mugs by Japanese brand Kinto. For those with a nose for it, Made is a close approximation of design heaven.
FLASH POINT Floor-to-ceiling windows come as standard across the 18 storeys, but ask for a 16th-floor Deluxe room for the clearest views of the Empire State Building.

At the quiet end of Canggu's Echo Beach on Bali's southern coast, the sun sets in a paroxysm of savage purple over temples and boats and the last of the day's surfers. Just at the edge of the sand, the new COMO hotel's beach club and restaurant looks like a super-lofty barn, breezily open on three sides, with tables dressed in green, tie-dyed linen, octopus and snapper on the open grill. The winding paths of the hotel behind are edged with tall pale grasses, orange hibiscus and the scarlet, candle-shaped buds of red button ginger. Everything here seems to tilt towards the slim, central pool – its palimanan stone tiles glinting like mother-of-pearl – with rooms arranged around and above it. At the top of this bower of bedrooms, woven through with creeping vines, are 12 penthouses with vast, white-arched terraces positioned so the sun illuminates the space throughout the afternoon. Indolence and amiable serenity are encouraged everywhere, always with the unyielding presence of the Indian Ocean beyond, where surfers busy themselves on the black sand, some taking lessons at the hotel's surf school, set next to an old Hindu temple studded with little plates of offerings: marigold buds and incense and segments of lime. Canggu is Bali's coolest spot, and all the restaurants, sweet-tempered cafés and pretty boutiques are a short walk up the beach.
FLASH POINT There's a really good kids' club with beautiful board games, wicker scooters and origami butterflies, and the shop stocks only marvellous local designers, such as dressmaker Feather and Find, at unusually uninflated prices.

This is the ultimate boutique beach hotel from the world capital of cultural fusion. Its creators, Montalba Architects, Studio PCH and TAL Studio, have channelled the minimalist aesthetic of ryokan – traditional all-timber Japanese highway inns – and used organic materials and a neutral palette to fuse surfer-luxe with fusui, the Japanese form of feng-shui. Slotted into an exclusive strip of sand known as Carbon Beach, this two-storey hideaway has just 11 suites and five beach bungalows. All the starkly elegant rooms are built from stained teak and Brazilian ipe hardwood, finished with sand-coloured Jerusalem limestone, sliding glass doors, tatami mats and shoji screens. Sound, vision, curtains and air-con are controlled by iPad; desktop pens are by Balmain. The bathrooms feature voluminous teak tubs with dramatic skylights. Guests get preferential treatment at the adjacent but otherwise overbooked Nobu Malibu restaurant, but can also order from the customised hotel menu and dine on seared toro with truffle teriyaki, perhaps after a Matsuhisa Martini of Akvinta organic vodka, grade-A sake and pickled ginger. Where else but on southern California's glittering coastline could medieval Japanese minimalism merge so well with cool American modernism?
FLASH POINT For an oceanside breakfast, you can't beat Nobu French Toast: a slab of pillowy shokupan bread, seared with caramelised bananas and brown-butter maple syrup, served with a side of green mango fruit salad. And, of course, as much blue-chip ozone as it's possible to inhale.

There have been successive openings at this 19th-century pile, which includes a restaurant-with-rooms, cookery school and, most recently, a hotel in the château-style mansion, one of the most exciting UK arrivals of the year. Press baron Lord Beaverbrook bought the estate in 1911 and lived here until his death, hosting everyone from Churchill to Chaplin. Its latest incarnation is down to a talented team (Joel Cadbury, Ollie Vigors) who bought the place in 2011 and set about its transformation with Susie Atkinson, the creative force behind Babington. At The House, as the hotel is referred to, immaculately restored antiques share space with a vast art collection. Each bedroom is an homage to a past guest. The Elizabeth Taylor, for example, is dusky pink with a canopied four-poster. At the centre of the house, at the foot of a sweeping staircase, is a grand piano, and at weekends the sound of jazz classics floats up. Order a G&T in the Twenties-style bar before heading for innovative food by former Nobu head chef Taiji Maruyama. The screening room has a library of films hand-picked by Bugsy Malone director Alan Parker, who worked with the hotel's creative director (and advertising legend) Frank Lowe in the 1970s. FLASH POINT A Spitfire Collins loaded with elderflower, ginger and lemongrass, on the terrace, gazing out over the Surrey Hills.

There is more fizz and theatricality in a few square metres of the Principal than there is in the entire repertoire of Gilbert and Sullivan. You will know the building even if you have never set foot inside it. It has dominated one side of Russell Square since 1898, its vast, fussy façade composed of thousands of terracotta tiles in a luscious pinky shade of thé au lait. What was for more than a century the Hotel Russell was taken over a few years ago by the Principal Group (whose name is popping up above lobby doors all over the British Isles). The public spaces, which never lacked for marble-clad pizzazz, have been elevated to new heights. Giddy new heights – witness the shameless yet somehow wholly appropriate mirror ball that hangs over a velveteen confidante sofa in Fitz's bar. The 330 or so rooms, by Tara Bernerd, combine muted midcentury cool with arch Victoriana.
FLASH POINT The name of the man responsible for this kooky fantasia of a building was Charles Fitzroy Doll. He's best known for his work on the interiors of the Titanic. Ascend the marble staircase at the Principal and you'll find a curious little bronze sculpture of George the Lucky Dragon on the second-floor landing. George had a less fortunate twin, who, alas, went down with the Titanic. Long may George enjoy the surprised smiles and passing caresses of guests in his splendidly appointed Doll's house.

If your room at the new Freehand reminds you of your college bedsit, it's because basically that's what it is. For years the hotel was a dorm building for the School of Visual Arts and the new owner (the unstoppable Sydell group) has decided to retain the 1970s vibe. Hands up who likes pine? That's lucky, because along with good-quality linens and Argan products by La Bottega, you'll find heaps of it in the compact bedrooms and even cosier bathrooms. But you're not here to sit in your room swotting and besides, it's the public areas – with interiors by Roman & Williams – that make Freehand so fabulous. The Gallery on the mezzanine level is where the action is. African art, retro furniture, outsize round paper lantern lampshades and tchotchkes galore make this a warm and convivial place to hang out. Off to the right is the wood-panelled GW bar, the hotel's most grown-up space, with its bas-reliefs, cornicing and white-jacketed bartenders, while at street level, with its own street entrance, is Simon and The Whale. Entirely independent of the hotel, S&TW is one of Manhattan's most sought-after new restaurants – try their black bread with tarama or roast chicken with wild rice and preserved lemon and you'll know why.

Set across four Victorian townhouses in a tucked away part of Paddington, this feels like a real neighbourhood joint. Replacing the traditional hotel lobby is a café serving cold-pressed juice and custom-made coffee; inside it's all minimalist and pared-back, with plenty of exposed brick and old cast-iron radiators. The restoration has kept some lovely details from the buildings' previous incarnations, with years of paint stripped from the most charming, including a striking spiral staircase. Vintage furniture has been sourced from schools, hospitals and museums, and there are mid-century pieces in nooks and crannies dangling with greenery from Conservatory Archives, East Lon-don's indoor plantsmiths. In the 73 bedrooms are headboards fashioned from 200-year-old parquet flooring and handsome brass wall lights; the utilitarian bathrooms, with black-and-white subway tiles and soap-on-a-rope in the showers, are smart and sweet. The Lounge restaurant, overseen by Sara Lewis (formerly of Grain Store and Nobu), serves terrific global food such as lentil daal with seared mackerel, spicy fish tacos and charcuterie. It also doubles as a bar, with cocktails from establishments around the world, including Bar Termini's take on the classic Negroni, served chilled in tiny custom-designed glasses. Borough Market's most delicious pastries are biked over fresh from Bread Ahead for breakfast, and are paired with a near-perfect flat white.
FLASH POINT A cluster of interesting foodie openings have marked Paddington as an area to watch. Nearby Pergola on the Roof is great for a drink and to sample some of the capital's finest street food.

Stepping into this dazzling five-suite urban oasis, hidden behind a labyrinth of cobble-stone alleys, is a drama-packed moment. The discreet metal gate swings open onto Avignon's largest secret garden, lined with towering cypress, palm and plane trees. Set back in one corner is this pretty Provencal-style guest house, the brainchild of Parisian owners and resident hosts, Gilles Jauffret and Amaury de Villoutreys, who spent six years restoring a dilapidated mansion where medieval cardinals once slept. The result is gloriously inventive. Each of the spacious, voyage-themed bedrooms are filled with an eclectic jumble of contemporary furniture and handpicked 18th and 19th century finds (the Consul suite is decked out with ancient Egyptian wedding trunks and a replica of Tutankhamun's throne). Generous breakfasts are served at the long cherry-oak table or outdoors, lost in the bamboo and wild roses, amongst cooing doves and chirp-ing cicadas. There is a secluded pool and even a mini spa in a Versailles-inspired folly. Come sunset, everyone drifts over to Le Complot, the owners' popular loft-like bar next door for locally distilled, liqueur-based cocktails. There's no dining room, but nearby restaurants deliver and it's easy to arrange your own slice of heaven with a candlelit dinner in the romantic Orangery pavilion.
FLASH POINT The 14th-century Palais des Papes, the hub of all cultural activity during the summer, is only a five-minute stroll away.

This wonderful Soho institution has been devoted to fun and frolics since 1867. Now beautifully redone with a deft mix of nostalgia and panache by the unstoppable Nick Jones and his Soho House team, the place has been completely rejuvenated and expanded with 33 brand-new bedrooms. Fortunately, it still feels ripe for dalliance rather than business. Originally opened by Auguste Kettner as one of London's first French restaurants, it soon became a place for secret assignations, not least between Edward VII and Lillie Langtry, and in the 1920s Geoffrey Gelder's Kettner's Five produced hit records from here. Even when it became a Pizza Express from 1980 to 2008, Kettner's felt deliciously raffish and glamorous. And so it remains today, Jones having kept its famous Champagne Bar, the pianist in the Piano Bar and the ravishingly pretty restaurant with its fin de siècle mirrors and floral plasterwork, now with the feel of an in-ter-wars French bistro serving classics such as omelette, terrine, steak tartar and bouillabaisse. Upstairs, where much naughtiness took place in the former cabinets particulières, the boudoir-style bedrooms are moody essays in Soho House perfection with ice for cocktails delivered promptly at 7pm. Most stunning is the huge wood-panelled Jacobean Suite, which is just made for partying.
FLASH POINT The tiny Champagne Bar was initially besieged by all-comers, but its semi-circular walnut counter serving Ruinart house bubbles is now a secret haven reserved for hotel guests only.
